
Nothing like a balloon flight to take one’s mind off of traveling jitters. I leave the country this Sunday, and have been cramming in last-minute get togethers with friends. And last week, that took me to Pagosa Springs in Colorado. The weather was sunny and calm, perfect for flying. There’s something so zen, yet so giddy and whimsical, about being in a hot air balloon.
One thing, though: while I love hot air balloons and being part of chase teams, getting vegetarian food afterward can be tricky. Between tail gating after a balloon flight and going to pilot events, it can be hard to know what the food situation will be like. This time, I lucked After this flight, there was a dinner event featuring a number of restaurants in town, all with small plate dishes— but most of their food was full of meat. There was one restaurant— J.D. Culinary Concepts.

Golden beets, goat gorgonzola, peaches, pistachios— glad that the veggie option was delicious! (Also, The Backroom Wine Bar had a fantastic gluten-free chocolate cake, with a perfectly sweet raspberry sauce.)
